In the big smoke, there are no shortage of options for you to grab your lunch. From the Pret’s to the Itsu’s from Subway to Starbucks – you can grab what you like on-the-go.
If you work in an office that has a kitchen, some of you may opt for making lunch at home and popping it in the fridge until eating time. This can be a healthy option, but also easy on the wallet.
Over the next few weeks, I am going to give it a go at doing just this and hopefully share some interesting and easy recipes with you. I cannot always guarantee that they will be low on calories and fat, but they will be fun and fresh.
Today, I started with my fruit and cheese salad. I partnered this with some Tesco toasted 3 seed mix. It is an interesting mix, which I discovered at Counter Albion. Fresh Melon with goats cheese and seeds. Weird mix I know, but it really works. The melon has minimal fat, but is high in Vitamin A which is great for the immune system! Goats cheese also offers this gem of a vitamin, as well as protein which is one of our body’s building blocks. Good for lunch, if you are planning on a workout in the evening.
