If you are reading this, it’s highly likely you have a keen interest in food, including it’s preparation, execution and delivery and I therefore have just the location for you; Jenius Social. I jumped at the chance to check out Jenius Social which is a food, cookery and event space based a few minutes’ walk from the Holloway Road. A leading venue who with their own in-house chefs run cookery and drinks events as well as offering bespoke private dining options.
Jenius run a whole range of cookery classes and I opted to attend the Wild West BBQ. Other classes include classic French desserts, artisan sausage making, tempting tapas and authentic Thai cooking to name some of their selection. Having been warmly welcomed by the venue manager, Catherine, you have an opportunity to get acquainted with the other members of your class over a drink. Before heading into the kitchens aprons on prior to being taught by Head Chef Andrew. Andrew is clearly a talented chef – previously having worked in Jamie Oliver’s Fifteen restaurant and with Rick Stein in Padstow- and is a natural with people which puts you straight at ease. The team’s passion and excitement for food is clear for all to experience and later taste.
The class is billed as a ‘Love letter to meat’ and an ode to sticky buffalo chicken wings, pulled pork, baby back ribs, homemade BBQ sauce and coleslaw it was! An American road trip pit-stopping to provide you with a step-by-step guide to creating and blending flavours. What is great about the classes are the small group sizes; all taught in a home style kitchen so that you are able to replicate the recipes easily in your own kitchen. We had a chance to learn the secrets of bold flavours and winning BBQ techniques. By the end of the class we were able to create meat rubs and marinades, improved our knife skills and learnt the basis and creation of delectable sauces and how to ratchet up the heat levels.
I had mixed spices, prepped vegetables, shredded slow cooked pork shoulder and leg, smoked and glazed chicken wings and created a BBQ masterpiece. After the bell rings on your class, you are able to feast on your creation immediately. It was the ultimate meat feast and so very yummy. At 2 hours in duration, the time flew by and I was beyond enthused and ready to test out the recipes learnt on my family as I casually showed off my new found BBQ skills in winter! Imagine what skills I will be able to show off by the time summer comes hurtling around the corner again.
